How to make super easy homemade gnocchi

If you’re anything like me, you’ve dreamt of making homemade pasta but with our busy lives – who has the time? Something tells me our predicament has possibly changed and we can finally get our hands messy and make some homemade gnocchi. I had so much fun making them at home and it was so gratifying knowing I’ve made a meal from scratch.

Get the family involved and it can be a great way to kill two birds – keep them busy and make dinner in the process

Yield

3-4 Servings

Ingredients

    • Peeled potatoes (depending on your desired quantity)
    • Plain flour (ratio for every 3 parts potato /1 part flour)
    • Salt to taste
    • 1 egg Yolk
    • Parmesan Cheese (not a must if you’re vegan)
    • A dash of olive oil

Instructions

      • Boil peeled potatoes until soft. Mash it well (ideally use food processor or potato masher if you own one).
      • Add plain flour (ratio: for every 3 parts potato /1 part flour).
      • Add salt to taste.
      • Add one egg yolk and parmesan cheese if you’re ok with diary (not a must if you’re vegan).
      • Mix together - add more flour as needed if it’s too sticky.
      • Cut into small pillows and roll them onto the back of a fork to make them look pretty.
      • Boil water with a dash of olive oil.
      • Add Gnocchi only when water boils.
      • Pull out when they float (should only take a few minutes).
      • And voila the yummy homemade gnocchi is ready, add desired sauce and serve.
